Provisions is a CSA mushroom farm growing for communties in the Seattle, Olympia and Portland areas. We deliver fresh, cultivated and wild crafted, exotic mushrooms to the Northwest. Provisions offers many delicious varieties including, Oyster (Pleurotus ostreatus and eryngii), Shiitake (Lentinula edodes), Pioppino (Agrocybe aegerita), Lions Mane (Hericium erinaceus), and many wild crafted species from our local forests including, Chanterelle, Oyster, Porcini, Matsutake, Morel and Chicken of the Woods.
Our cultivated mushrooms are prepared on local, natural and non-treated woods, grains and grasses and are grown free of chemicals and pesticides. Our wild crafted mushrooms are ethically harvested from our local forests, with the least amount of impact to our forest ecosystems. This means we don't rake or disturb the forest floor and we don't harvest all of the mushrooms we see. By doing this the fungus will continue to expand naturally, allowing younger mushrooms to grow and older mushrooms to reproduce by releasing their spores. We want to assure you that the mushrooms you are receiving have been grown and harvested with the up most respect of people and planet. We strive to be as ecologically-friendly and sustainable as possible, while delivering the highest quality mushrooms to you, our shareholders.
Exotic mushrooms are fast gaining popularity in the U.S. For years the mushroom industry has been dominated by the Button (Agaricus) mushroom growers. While these varieties have their place, Provisions would like to see rare and exotic mushrooms become more available to the general public. By teaming up with Helsing Junction Farm, Provisions is able to offer you the freshest, most diverse selection of mushrooms available. No more wondering how long your mushrooms have been sitting on open-air display cases in grocery stores. Your mushrooms from Provisions will be picked with loving hands the day before you get them, extending the storage life so you can enjoy them longer.
In addition to their delicious flavors, mushrooms are a great source of nutrition. Oyster mushrooms have been found to help lower cholesterol. Shiitake’s have been used medicinally for centuries in Asian cultures as having anti-cancer, and anti-viral properties. Lions Mane mushrooms have shown to help the immune system, and have the potential to stimulate neurons to re-grow. Exotic mushrooms boast nutritional qualities that include up to 30% protein, almost no fat, are high in dietary fiber, and rich with antioxidants.
