Oyster (Pleurotus ostreatus)
A fast, vigorous growing variety. Yields 10-20 oz over 4-8 weeks.
A mild flavored and lightly textured mushroom.
Does not need to be cooked long.
Lions Mane
(Hericium erinaceus)
An attention getter at the Farmers Market. Grows 10-20 oz over 4-8 weeks.
Crab meat like texture, mild, sweet flavor. Delicious in butter or cream sauces.
Mushroom Plugs
Shiitake (Lentinula edodes)
The most popular mushroom species for log cultivation.
Logs will take a year or more to fully colonize before mushrooms will fruit. If logs are taken care of, fruitings will continue for 3-4 years.
Oyster (Pleurotus ostreatus)
Great success rate for the novice cultivator. Oysters are generally fast growing and have been known to fruit after 8-10 months after plugging logs.
